This is a limitation of the DMX protocol. I've never tested this project with more than 2 though so I'm not really sure to be honest. I've never had a problem with an Arduino being fried. If you are planning on building say a lamp that can be controlled by DMX you would want to make sure your mains voltage feeding your lamp is opto isolated from the actual DMX circuitry.
